The weekend

Another Monday has rolled around which means that another weekend has come and gone....oh, how I wish the weekends were longer.

My Easter weekend was fairly uneventful. I didn't dye Easter eggs or hunt them or get an Easter basket.

I feel kinda mis-treated....just saying. 

There are no young-in's in my family right now...so therefore, no typical Eastering.

Yes, I made that word up.

We did however go to Easter service, which was great. The rest of the day I took a two hour nap...which was really great.

Friday my friend and I went to see one of my all time favorite old country bands, The Bellamy Brothers. I absolutely love them...they remind me of my Papa. Well, my sweet friend Katie loves them even more and the band holds a special memory for her and her dad, see he passed away 11 years ago on Friday. So she was out there celebrating for him.

In case you are wondering what songs they sing...they sing, "Redneck girl", "Reggae Cowboy", "If I said you had a beautiful body would you hold it against me"

The highlight of the night is I got her T-shirt signed by the Bellamy brothers and got her a drumstick signed by the drummer...I worked my magic and in the words of the drummer...my sexiness...and helped make her night extra special. 

Yes, the drummer was probably in his late sixties..but I will take a compliment where I can get it...besides he was a drummer...in a band.

Saturday my mom and I went fishing...and to clear up any confussion from her facebook status. I did not get skunked as in sprayed by a skunk...she skunked me as in she beat me fishing, She caught 30, I caught 1.

Do you know how many people have called me and asked me if I was sprayed by a skunk and gave me all these remedies on how to get rid of a skunk smell. Needless to say, it's nice to know people care about me being sprayed by a skunk.

Oh, Monday

I am really not a fan of waking up to snow...only when I am in the mountains for snow skiing do I enjoy snow. In Oklahoma, where we had that blizzard last year and I was snowed in for a few days...I do not enjoy snow. 
Maybe if I got a snow day and could stay home, I might enjoy it more. 

I'm just a summer girl, though...I hope all you winter people enjoyed your snow day...and I guess I can't really complain because we have had a great winter, I mean...this really is the first "wintery" day we have had...so I'll stop complaining now.

Let me tell you about my oh so exciting weekend....it was spent...doing absolutely nothing...and I LOVED it.

I think everyone needs a weekend where they have no place to be at any certain time, just free to do whatever comes up or free to lay around in your comfies and watch movies and your dvr. Since I have been sick all week, I thought it would be best to just lay low and rest and get to feeling better.

It must have worked, because I feel 99.9% like myself. 

Being lazy allowed me to finish the Hunger Games series...and let me tell you, it was a little hard getting into the third book, Mocking jay, I was a little...actually a lot confused...but needless to say I am very happy with the ending. I won't give it away for all those who haven't read it yet, and if you haven't started the Hunger Games...OMG you totally should. I never got into Harry Potter or even the Twilight books, but this series is amazing. I can not wait for the movie. So excited!

It's true. Reading the Hunger games really makes you think, that if for some reason you were sent in to a game where you had to fight until the death or if you were just dropped on an island or something and had to survive, I am not sure I could. I like to think I can...but I don't know really.

This tells me, that A. I need to get in good shape...you know in case I need to outrun some mutts B. Brush up on my archery skills C. Get my little brother to show me how to skin animals and such and D. make sure to have a cute boy as an ally.

So, now that I am done with that series...what are some great books to read? 

Saturday night, I opted for a night in with my sweats, ice cream and watched, "He's just not that into you" It was on TV and I felt I need a refresher on how not to be a crazy single girl.

Sunday, went to church...where we heard a great sermon on Love and relationships...which I will be blogging about maybe tomorrow...in the spirit of Valentines day...it was definitely something I needed to hear..funny how God does that.

So sad to hear about Whitney Houston...that is a voice that is one of a kind....I feel heartbroken for her daughter and mother. I was very touched by the opening of the Grammy's when LL Cool J said a prayer, loved how he chose to do that.

Adam Levine is seriously hott.

Enough said.

Blake Shelton...always love him and Miranda...it makes me sad about Glen Campbell...Alzheimer's is just so heartbreaking...glad to see him up there singing.

All in all, may weekend may have been quite boring...but I think it's just what the doctored order. Now, I will be well rested to see my future husband this weekend...Jake Owen.

Best.Concert.Ever

Morning Loves, hope everyone had a great weekend!

This morning I woke up with no voice and I can barely here in my right ear, why you ask? Because I went to hands down THE BEST CONCERT I have ever been to(not including George Strait, bc no one is better than him).

I got to live out my childhood dream and not only see New Kids on the Block but Backstreet Boys and let me tell you. If it was ok for a 26 year old woman to put up posters of Donnie Wahlburg and Joey McIntyre I would.


In a heartbeat.

I don't think I stopped smiling and giggling like a little school girl the whole night.

It was AWESOME!!

I wish I had better pictures for you, but my camera has seen better days and my phone just didn't do the concert justice.


Bri and I...we could hardly contain our excitement the whole night. We had a blast!!

Please excuse my deer in the headlight look...

Thank you bestie for the tickets!!

One thing I didn't like about the concert, the fact I still can barely hear out of my ear...please tell me my hearing will come back : )

Dinner and Dessert for a Valentine's Day Girls Weekend

I put on my best Chefs/bakers hat this last weekend and whipped up a home cooked meal for my lovelies...Miss Football and Bestie. I had originally planned on making PW's fettucini Alfredo, but that went out the window when the non-dairy business showed up. Stupid non-dairy. So, with that I decided to make my favorite pasta dish from the Olive Garden, Capellini Pomodero-a light and healthy pasta. Now, for some reason the grocery store was out of fresh basil...so I had to improvise and kinda just threw in a bunch of stuff that I had in my spice rack. I also used whole wheat linguini instead of Angle hair pasta. My version probably wasn't quite like Olive Gardens. Here is the recipe for the Olive Garden version.

Olive Garden's Capellini Pomdero

Cook Time: 12 minutes

Total Time: 12 minutes

Ingredients:

  • 3 cloves garlic, minced
  • 2 cans (14.5 ounces each) good quality diced tomatoes, or about 2 pounds fresh peeled and diced tomatoes
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups fresh chopped basil leaves
  • 1/3 cup extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 12 ounces dry angel hair pasta, cooked

Preparation:

Heat olive oil and add garlic; cook until garlic is tender. Add tomatoes and pepper and heat through, stirring constantly, about 2 to 3 minutes. Remove from heat. Transfer hot, cooked pasta to large bowl. Toss pasta gently with tomato mixture, the fresh chopped basil, and half of the Parmesan cheese. Serve immediately and pass remaining Parmesan.
Serves 4.

Super duper easy.

Now for dessert, I made some yummy Vegan Red Velvet Cupcakes in honor of Valentines Day. My mom makes these all the time and they are seriously delicious. So moist, best Red Velvet I have ever had

Vegan Red Velvet Cupcakes
Adapted from Vegan Cupcakes Take Over the World
Makes 24 cupcakes

2 cups soy milk
2 teaspoons apple cider vinegar
2 ½ cups all-purpose flour
2 cups sugar
4 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2/3 cup vegetable oil
2 ounces red food coloring
4 teaspoons vanilla extract
  • Add vinegar to soy milk, and set aside to curdle.
  • Sift flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  • Add vegetable oil, food coloring, and vanilla extract to the curdled soy milk, and mix.
  • Pour liquid ingredients into the dry ingredients, and mix.
  • Fill cupcake liners ¾ full.
  • Bake in a preheated 350° oven for 20 minutes or until
Now, I cheated and just bought cream cheese frosting from the store, but here is a yummy version of Vegan Cream Cheese frosting

Vegan Cream Cheese Frosting

½ cup margarine, room temperature
½ cup Tofutti Better Than Cream Cheese, room temperature
2 teaspoons vanilla extract
4 cups confectioners sugar
  • Cream margarine, cream cheese, and vanilla extract.
  • Slowly mix the confectioner’s sugar into the creamed sugar, and then beat until smooth and fluffy.
  • Frost cooled cupcakes
I also, served this wine with dinner one of my favs...Galo wine's Moscato.
